Our approach to Caribbean cuisine is to be authenticate and true to our Jamaican roots while bringing you traditional American comfort food favorites. Jamaican cuisine is a combination of traditional west African food like ackee, saltfish, mackerel and plantains integrated with English, Indian, and Chinese influences like the use of roasted meats, curry seasoning, and cabbage as a primary vegetable.

A Brief History
Jamaicans use coconuts as the base ingredient in many dishes – flavored water, flavored milk, flavored jelly, stews and various seasonings. And, did you know that dishes like rice and peas (kidney beans), curried dishes, mackerel, king fish, and perfectly stewed meats are all staple foods in Jamaican’s daily diets. Coconut oil, the base of Jamaican cooking for years, is made from coconut milk. In earlier times, the coconut tree’s shiny leaves were fixed into an arch at weddings. Another fun fact is the spear of the leaves were stripped to string the hibiscus petal in vases, forming a welcome bouquet in many Jamaican hotel foyers.
